That one with the butchered so called bobber rear end is easy to put right, a subframe (got one) and a seat (got one) a tail plastic (got one, a bit ratty but it would do) and a rear light is about it would need. 850, call it 775 with a bit of haggling, plus a handful of bits would get you one to do...

The simplest way would be drill into the crankcase block and tap for a sensor.
Another option would be to get the oil cooler lines remade with a sensor tee in line.

There is no requirement to remove engine numbers from a cat b, only the the "body shell" must be crushed. I assume that would be the frame on a bike. Any other parts may be sold. Cat a are not allowed to have any part sold. So it's either an engine from a cat a sold illegally or a stolen one. The se...

Sorry, WOT is wide open throttle. Jet for flat out full throttle, nothing else matters for high speed runs or the drag strip. Doesn't even matter if it'll tick over.. the O2 sensors? In your second picture, there doesn't look to be much clearance between the front tyre and the front downpipe, will it clear at full suspension compression?

it looks to have been a good day, very nearly 150mph.

It should be quite easy to tune the carbs if you fit the Wideband sensors and display, as you only have to tune for WOT. A set of Flo-Commanders will make tweaking between runs much simpler than changing jets.

It could be a set of Chinese fairings, but that's no real problem- the fit and finish is generally ok. SP1/SPy's are a great bike- good for track days- but they won't beat anything recent and modern.
