when you put the carbs back on, did you remember to put the throttle position sensor back on???
or could it be water in the fuel?
might be worth draining it off and filling with fresh, run a bit off before connecting up...
and are all the vacuum lines ok, not perished?
You do not have to say anything. But it may harm your defence if you do not mention when posting something which you later rely on in quote. Anything you do say may be ripped to sh*t.

Just a thought
After 2 years it’s probably a bad earth some were or iffy connection gives them all a good clean
Also
The ignition pick up lead runs from the right side of the bike to just behind the frame on the left hand side along the inside of the V of the engine under the carbs
It gets very hot and rattled about this can break the wire inside the insulation the vibrations makes the contact come and go and it’s a bugger to find
Try tracing the wire to where it goes over the engine and move it about a bit and see if that makes a difference
Image
its big----- its red ------its throbbing and it’s a thousand CC

Fuel feed to one pot?
Try filling fuel lines with tank off, and clamping vac line. That should get the bike to run ok for a minute or two.

Is this when ticking over, running or when?
It's not falling off, it's an upgrade opportunity.
