I am going to use a different speedo cluster to the DuCafe, but need to know what is involved
This is not the one I will use, however how would I connect something similar, assuming its not a Ducati monster item?

How do I find out the ratio of the speedo?
Are they all 2:1:1?
What about connecting it up.........is it a case of making sure the connectors are the same and away you go?
