Iv just come across this vid on YouTube of some NSR's ranging from 1984 to 2001.
But why do they constantly keep blipping the throttle? Is it a two stroke thing, why?

On a nice race tuned 2 stroke you tend to blip the throttle for a number of reasons
1) when starting from cold they don't idle well, so you blip to make sure it won't stall
2) it is the normal way to warm them up as you need to get some heat in so they don't cold seize.
3) as the oil to the big ends and piston is mixed in the fuel, it makes sure you are getting some extra in there to lube everything.
4) because it sounds great

They look awesome when the power band kicks in and lifts the front wheel up!
