Toby, check your front tyre for age and scolloping. If it is getting scolloped it will cause this. I have had it before. 2 different bikes have done it. New tyres have fixed it both times. But check your brakes and head bearings etc.

Check wheel balance, wheel bearings and head bearings

Check your zip & get it repaired if ness. Then you wont have to take your hands off the bars in the first place...
