Ok it seems all sorted
I went through the whole thing today
Pulled off the Carbies and checked and set the idle mix to 1 turn out from all the way in (all seems ok)
Pulled apart the petcock and checked diaphragm (all good)
Pulled the valve covers and checked the timing now this is where I find an issue it seems pretty close but not exactly right so I decide to pull the cams on the front head and see if I can rectify this is where I found the issue I had the Exhaust and Intake cam round the wrong way on the front head i'm not sure what the difference is but I swapped them back re checked the clearances and bolted it all back on
Re fitted carbs , Airbox , filter , fuel tank etc fired straight up and ran good now it runs well (when warm)
When its cold its still a little hesitant to rev up off idle when you crack the throttle but light throttle is fine
Once its warm it runs well
Time for a registration inspection and get out for a ride before the cold weather sets in here

Reading through this I wonder if the choke cable adaptor, where it goes form one to two cables wasn't seated right, meaning that choke was full on all the time?

Now it's ok again you'll never know, of course.

Good that you noticed that cams are marked IN and EX but tbh it makes very little difference, the grind is almost the same.

As you say, forget it and ride the thing.
