Hi
Just rerouted the choke cable and now putting air box back together.

I did however notice two parts of the air box that were missing something. I think they need to be filled with some sort of sponge/foam.

Get a ting piece of foam and cut out to fit or just leave it be?
Someone put it together, so I should be able to pull it apart.

Yes they will need replaced, and you should try and suck out all the remains on the old sponge with a Hoover so they don't end up in the engine or the carb diaphragms.

I just cut a replacement out of some old MX air filters that I had in the garage, but others have used foam from an aquarium.
