7.5 wt 140mm air gap, but 145 if you're lighter may be better.
But get rid of the std springs, for £100 any make will make a huge difference.
I have WP at the moment, but rate the Hyperpro, I've fitted several sets for people and the bikes always ride well straight off with the recommended settings.
If pulling the forks apart, do the head bearings and slider bushes as well- the sliders make a lot of difference, especially with braking, trail braking is much easier, lots more feel.

With standard springs I believe 7.5 is the way to go. I belive this is what Roger uses when doing the racetech fork upgrades. Are you going to taper the rebound rod and put a 1mm relief hole 27mm up the cartridge. http://www.ablett.jp/bikes/vtr/vtr_sus.htm
I'm in the process of doing mine at the moment. Just rubbing down and preping the lowers for a coat of paint. I'm then going to follow the guide above and put some new springs in. I'm thinking of using some Ohlins linear springs.
