Choke cable

Whilst putting the bike back together today, I managed to move the carbs enough to snap the choke cable mounting. Now I cant work out how to get the cable out of the hole it goes into, then remove the piece that is still left in there screwed into it's thread.

I have found the choke cable that ill probably need, although I dont think there is anything wrong with mine:

But all the choke cables on ebay come without that little sleeve that is snapped off. Anyone know where to get one from (and how to get them off)?
