With a 105db limit you should be OK with race cans. That said you've raised a question I'd not thought of, namely how do I know I'll pass the test?
I've got after market cans with baffles but they sound bloody loud. My finely tuned ears can tell whether they're 90db or 120db. I know it won't be actually 120db but it would be a shiter to be turned away and I'm looking at other track days before had where the limit is lower.
I do them all the time with the GSXR with a race exhaust, no baffle and it's 102dB. With baffle in it's 99 or 100dB
I did first time in fast group yesterday at Silverstone, and crouton knows why, but the did 7500 revs there. My bike was suddenly 109dB. I had to fill the end with wadding and put my baffle in, it went down to 102dB at 7500 revs.
Cadwell is a static noise test at 5000 revs. A standard can vtr will be 100dB at the very most. Mine has drilled standard cans and I expect it to be 100 to 102db as it's no louder than the GSXR.
With loud after market cans, I would guess will need baffles in to be 105dB or under.
Worst case, buy some wire wool from screwfix to bring with you. If you fail, you can put a wad of that on the baffle then refit it. It'll 100% get you below 105dB
