New to Brighton /Lewes area

Hi I just moved down to Alfriston from London and only recently got myself a Firestorm.Just looking for some advice for good roads to go riding on in the Brighton,Lewes area.
Ideally I'm looking for some nice twisty roads that are a bit off the busy beaten track,also somewhere thats mostly free of Police.
