I've used silver wheel paint then lacquer, just rattle can stuff but it's come out ok and similar to original.

Has anyone used a bit of filler to smooth out the pitting first or just sanded them down a bit?

Lately I have been using rattle cans... etch primer to start with.. Acid 8 by Upol is very good, I have used Halfords etch with no problems too and obviously there are plenty more brands. You can go straight to top coat be it gloss or satin or base (metallics) with a few coats of lacquer.. all depends on what finish/colour you are after. As for top coat brands... again I have been buying Halfords but there's not a great deal of difference between your run of the mill makes... just put plenty of material on to help them last.

They won't need filler.. just sand them down thoroughly and put plenty of primer on. You can flat the primer to take any marks out but If there was anything to fill you be better off just using a spot of stopper.

Rubbed down with a scotchbright type flap disk on the grinder, then degreased, then Halfords etch primer, then lots of coats of "some old cans if paint I had in the shed"

Same here.

I used Simoniz 5 wheel silver, which is not that far off from the original colour IMHO. I did lacquer the fork legs this time, but I didn't the first time. I'm hoping with the added lacquer they will help them stay looking good longer.

I was going to do the same as AMcQ, paint the bottoms black, that gives you more of a USD fork look. However I had hassle with the black paint and ended up having to strip it off. Rather than try again I just stuck with the silver paint.

You can probably judge for yourself from the photo how close (or not) the colour is:-
