Clutch Drag?
Started bike up after it being in bits for best part of 7-8months..
Started fine, checked some stuff, held clutch right in to bar, engaged 1st gear, and the back wheel spins a lot, not possible to hold in place with mah foot, or stop it from spinning at all..
Bled the clutch fluid, topped it back up again, after removing a lot of air. Fired it up again, same thing...
What else can i check thats pretty easy, i.e. not stripping the entire clutch down.

It could be that the clutch plates are stuck together seeing as it's been so long standing
Before you go striping anything down, put it in gear with the engine OFF, then try rocking the bike back and forward with the clutch lever pulled in, that should release the plates. If that doesn't show up a problem then try what Steve suggests

Took the front sprocket cover off, was loads of old chain gunk, the long metal rod was a bit gungy, as was its sorroundings, took the slave cylinder to bits, cleaned the piston etc, but the general condition of the cylinder was pretty bad, scored, corroded etc. Put it back together, bled and refilled the clutch fluid, started her up on the stand, and no difference 
Took it out for a spin tho, and when i engage 1st, it doesnt want to pull away or anything like that. Have noticed that, altho it runs and ticks over fine with choke pulled out, even tho its warmed up sufficiently, when riding it will start to splutter, and it feels/sounds like the front cylinder is struggling to keep going, to the point where i gotta pull over, cos revving it give me nothing. Pulling over and stopping, it usually stalls. Set off again after starting it up with choke, and it does the same after about 5 minutes. Ive recently changed CCT's and downpipes.

Im now stuck with the cutting out/dying problem. It ran fine before i changed the cct's. When i put everything back together it felt like the front cylinder was having problems.

The idle speed will be then down from 1300 to about 600, then moments later it will die. I will then try to start her up with no choke, and it wont like it, using the choke will be marginally better, but should get it going, but if i try to give it some revs, it will shudder and begin to die again. Repeated this for about 10 mins til it started fine, idled at 1300 and let me give it some revs, managed to limp home, as it started to die again 5 mins later.
The fact that it runs fine then randomly doesnt is so frustrating, any ideas?

You didn't mention this, but I got caught out by this one.
Similar symptoms, so just maybe...
I have a K&N air filter fitted, cleaned it and re-oiled it. When refitted it revved fine, but misfired when I tried to use more than a bit of throttle.
Turned out I must have over-oiled it, 'casue when I washed it again and didn't add so much oil it was fine.
Presumably ran so rich it was cutting out.

It's not falling off, it's an upgrade opportunity.

Embarassingly enough it was the vacuum hose, (the smaller of the 3 that attach to petcock) that was on the wrong nozzle
Moved it to the proper nozzle and its all ok.. thanks for replying tho, schoolboy error, specially as i'd read about the repercussions of putting the hoses back wrongly, oh well, live and learn.
