
Its way too low so ive moved the rear set foward to give me more clearence but cant now work out how i move it down so the pedal goes up

Yes you do because the rose joint is female and fits on to the threaded bar. So loosen the locknut, undo the rose/pedal connection, turn the rose clockwise or anti to raise or lower.I don't think you need to loosen the bottom bolt that Jamoi has arrrowed, as that joint is a rose joint, meaning it will swivel on it's own,

Why do you need to remove the rose-joint fixing bolt to adjust the brake pedal height:?:
Adjustment is normally done as below by undoing the lock nut and then turning the push rod:-
